Bananas in Coconut Milk

Gluay buat chee, as it is called in Thai, must be one of the simplest Thai dishes there is and it's not at the expense of tastiness! Even those who think they can't cook will be hard pushed to get this wrong!  The only risk is over boiling the bananas. Boiling for too long will turn them mushy.                                          

Ingredients

  • 6 bananas
  • 375ml coconut milk
  • 2 tbsp/30ml granulated sugar
  • 1/2 tsp/2.5ml salt

Method

  • 1. Peel the bananas and chop into 2 inch/5 cm segments.
  • 2. In a saucepan, heat the coconut milk with the sugar and salt, and cook gently until the sugar dissolves.
  • 3. Add the banana pieces and cook gently for 5 minutes.
  • 4. Divide the mixture into 6-8 small bowls and serve warm.
